Chilean Walnut & Mushroom Galette


Main Ingredients

For the Galette Dough:

  • 1 ½ cups All-purpose flour
  • ½ cup Cold butter (cubed)
  • ¼ teaspoon Salt
  • 3–4 tablespoons Cold water

For the Filling:

  • 1 tablespoon Groundnut oil
  • 1 small Onion (finely chopped)
  • 2 Garlic cloves (minced)
  • 1 ½ cups Mushrooms (sliced)
  • ½ cup Chilean Walnuts (roughly chopped)
  • ¼ cup Goat cheese or Feta (crumbled)
  • 1 teaspoon Fresh thyme or rosemary
  • Salt and pepper to taste

For Assembling:

  • 1 Egg (beaten for egg wash)
  • Extra goat cheese and walnuts for garnish (optional)

Instruction

Step 1 - Prepare the Dough

  • Mix flour and butter: In a bowl, combine flour and salt. Add cold butter and use your fingers or a pastry cutter to mix until the texture resembles coarse crumbs.

  • Add water: Gradually add cold water, one tablespoon at a time, until the dough comes together. Do not overmix.

  • Chill: Shape into a disc, wrap in plastic, and refrigerate for at least 30 minutes.

Step 2 - Prepare the Filling

  • Sauté aromatics: In a skillet, heat Groundnut oil over medium heat. Add onions and garlic and cook until translucent.

  • Cook mushrooms: Add sliced mushrooms, season with salt and pepper, and sauté until they release moisture and turn golden brown.

  • Add walnuts and herbs: Stir in chopped Chilean walnuts and thyme/rosemary. Cook for another 2 minutes. Turn off the heat and let cool.

  • Add cheese: Once cooled, mix in crumbled goat cheese.

Step 3: Assemble the Galette

  • Roll the dough: Roll the chilled dough into a 10-12 inch circle on a floured surface.

  • Add filling: Spoon the mushroom-walnut mixture into the center, leaving a 2-inch border.

  • Fold edges: Gently fold the edges over the filling, pleating as you go. The center should remain exposed.

  • Apply egg wash: Brush the dough with beaten egg for a golden crust.

Step 4: Bake and Serve

  • Bake: Preheat oven to 190°C (375°F). Bake the galette on a lined baking sheet for 35–40 minutes or until the crust is golden.

  • Garnish: Optionally top with extra goat cheese crumbles and a few toasted Chilean walnuts.

  • Serve warm: Slice and enjoy with a fresh green salad or as a standalone meal.
