Main Ingredients

For Mirchi Achar:

  • 250g thick green chilies (slit or chopped into 1-2 inch pieces)
  • 1/2 cup pure mustard oil
  • 1 tablespoon salt (or to taste)
  • 1/4 teaspoon asafoetida (hing)
  • 2 tablespoons lemon juice (optional for extra tang)

For Achar Masala (Pickle Spice Blend):

  • 2 tablespoons fennel seeds (saunf)
  • 1 tablespoon mustard seeds (rai)
  • 1 tablespoon nigella seeds (kalonji)
  • 1 tablespoon fenugreek seeds (methi dana)
  • 1 tablespoon turmeric powder
  • 1 tablespoon red chili powder (adjust to taste)
  • 1 teaspoon cumin seeds (jeera)
  • 1 teaspoon coriander seeds

Instruction

Step 1 - Prepare the Pickling Spice Mix

  • Dry roast spices: In a pan, dry roast fennel seeds, mustard seeds, cumin seeds, coriander seeds, fenugreek seeds, and nigella seeds on low heat for 2-3 minutes until aromatic.

  • Grind coarsely: Once cooled, grind the roasted spices into a coarse powder using a mortar and pestle or a mixer. Don’t over-powder—it should have some texture.

Step 2 - Prepare the Green Chillies

  • Wash and dry: Thoroughly wash the green chillies and pat them completely dry. Ensure there's no moisture to avoid spoilage.

  • Slit or cut: Slit the chilies lengthwise or chop into pieces, as preferred. Remove seeds if you want to reduce the heat.

Step 3 - Combine Ingredients

  • Heat mustard oil: Heat mustard oil in a pan until it reaches smoking point. Then turn off the heat and let it cool slightly.

  • Temper with hing: Add asafoetida to the warm oil.

  • Mix it all: In a mixing bowl, combine the green chilies, ground spice mix, turmeric, chili powder, and salt. Add lemon juice if using. Pour the warm mustard oil over the mixture and stir well to coat all the pieces.

Step 4 - Marinate and Store

  • Bottle it: Transfer the pickle into a clean, dry, airtight glass jar.

  • Let it marinate: Leave it at room temperature for 2-3 days, stirring once daily with a clean, dry spoon. After that, refrigerate or store in a cool, dry place.
