Upma


Main Ingredients

For Upma:

  • 1 cup Semolina (Rava/Sooji) – roasted
  • 2 tablespoons Pure Groundnut Oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Urad dal (split black gram)
  • 1 teaspoon Chana dal (split Bengal gram)
  • 1 small Onion – finely chopped
  • 1-2 Green chilies – slit
  • 1-inch Ginger – grated or finely chopped
  • 8-10 Curry leaves
  • 2½ cups Water
  • Salt to taste
  • Fresh coriander – for garnish
  • Juice of ½ Lemon (optional)
  • 1 tablespoon Grated coconut (optional)

Instruction

Step 1 - Roast the Semolina

  • Dry roast the semolina in a thick-bottomed pan on low-medium heat until it turns aromatic and light golden. Stir continuously to avoid burning.

  • Once done, transfer to a plate and keep aside to cool.

Step 2 - Prepare the Tempering

  • Heat pure groundnut oil in a kadai or heavy-bottomed pan.

  • Add mustard seeds and let them splutter. Then, add urad dal and chana dal. Sauté until the dals turn golden brown.

  • Add chopped green chilies, grated ginger, curry leaves, and chopped onion.

  • Sauté for 2-3 minutes until onions become soft and translucent.

Step 3: Cook the Upma

  • Add water to the pan and bring it to a gentle boil.

  • Add salt to taste and stir well.

  • Slowly pour in the roasted semolina while stirring continuously to avoid lumps.

  • Keep stirring as the mixture thickens and semolina absorbs the water.

  • Cover and cook on low heat for 3-4 minutes until the upma is soft and fluffy.

Step 4: Finish and Serve

  • Turn off the heat and let it rest for a minute.

  • Add lemon juice and mix gently.

  • Garnish with freshly chopped coriander and a sprinkle of grated coconut if using.

  • Roasting Rava: Always roast the rava before cooking—it prevents it from becoming sticky and ensures a nutty flavor.
