Falooda


Main Ingredients

For Falooda Base:

  • 2 tablespoons Sabja seeds (basil seeds)
  • 1/2 cup Falooda sev or vermicelli (thin noodles)
  • 2 cups chilled milk
  • 2 tablespoons sugar (adjust to taste)
  • 1/4 teaspoon cardamom powder (optional)
  • 4 tablespoons rose syrup (Rooh Afza or similar)
  • 2 scoops vanilla or rose ice cream
  • 2 tablespoons chopped nuts (almonds, pistachios – optional)
  • 1 tablespoon tutti frutti or jelly cubes (optional)

Instruction

Step 1 - Soak the Sabja Seeds

  • Rinse 2 tablespoons of sabja seeds under water and soak them in 1/2 cup water for 15–20 minutes.

  • Once soaked, they will swell up and become gelatinous. Set aside.

  • Knead the dough: Add water little by little and knead into a stiff dough. The dough should not be soft like chapati dough. Cover and let it rest for 15-20 minutes.

Step 2 - Cook the Falooda Sev

  • Boil water in a saucepan. Add 1/2 cup falooda sev and cook according to the package instructions (usually 3–5 minutes).

  • Once cooked, drain and rinse with cold water to stop the cooking. You may also chop the sev into smaller strands for easier layering.

Step 3 - Prepare the Sweetened Milk

  • In a bowl or jug, mix 2 cups chilled milk with 2 tablespoons sugar and 1/4 teaspoon cardamom powder.

  • Stir until sugar dissolves. Keep the milk chilled until ready to assemble.

Step 4 - Assemble the Falooda

  • In a tall glass, layer the ingredients in this order:

  • 1. Add 1 tablespoon rose syrup.

  • 2. Add 1 tablespoon of soaked sabja seeds.

  • 3. Add 1–2 tablespoons cooked falooda sev.

  • 4. Pour in about 1/2 cup of the sweetened chilled milk.

  • 5. Repeat the layers once more if your glass is large.

Top with:

  • 1 scoop of ice cream.

  • A drizzle of rose syrup.

  • Chopped nuts and tutti frutti or jelly for garnish.

Step 5 - Serve Immediately

  • Serve the falooda immediately with a long spoon and a straw. Stir before drinking or eating to mix all the layers for a burst of flavour.

  • Soaking Time: Sabja seeds need proper soaking to bloom fully. Always soak in enough water.

  • Sev Options: If falooda sev is unavailable, use thin rice vermicelli or glass noodles.
