  • 1-2 Green chilies (slit or chopped)
  • 1/2 teaspoon Turmeric powder
  • 1 medium Onion (finely chopped)
  • 1 small Potato (peeled and diced, optional)
  • Salt to taste
  • 1/2 teaspoon Sugar (optional)
  • Juice of 1/2 Lemon
  • Fresh Coriander leaves (chopped, for garnish)
  • 2 tablespoons Roasted peanuts

Instruction

Step 1 - Prepare the Poha Base

  • Rinse poha: Place poha in a sieve or colander. Rinse gently under running water for 10–15 seconds while fluffing lightly with fingers until soft. Let it drain completely. Sprinkle a pinch of salt and turmeric, and mix lightly. Set aside.

Step 2 - Temper and Sauté

  • Heat oil: In a kadai or large pan, heat oil over medium heat.

  • Temper with rai: Add mustard seeds (rai bold) and let them splutter.

  • Add chilies & onions: Add slit green chilies and chopped onions. Sauté until onions turn translucent.

  • Optional potatoes: If using potatoes, add them now. Cook covered for 4–5 minutes or until tender, stirring occasionally.

  • Add peanuts: Toss in roasted peanuts and sauté for another 1 minute.

Step 3 - Mix Poha with Spices

  • Combine: Add the rinsed poha to the pan. Gently mix everything together without mashing the poha.

  • Flavour: Add sugar (if using) and adjust salt. Mix well and cook for 2–3 minutes on low heat, covered.

Step 4 - Finish and Serve

  • Final touch: Squeeze fresh lemon juice over the poha and mix once more.

  • Garnish: Top with fresh chopped coriander.

  • Serve: Enjoy hot with extra lemon wedges or a cup of tea on the side.
