Instruction

Step 1 - Roast the Ragi Flour

  • Heat 1 tablespoon of ghee in a pan on low flame.

  • Add the ragi flour and roast for 5–7 minutes, stirring continuously until it turns aromatic and slightly darker.

  • Add desiccated coconut if using, and roast for another 1–2 minutes. Turn off the flame and let it cool.

Step 2 - Prepare the Sweet Base

  • In another pan, heat 1 tablespoon ghee and sauté chopped cashews and golden raisins until golden and puffed.

  • Add this to the roasted ragi mixture.

  • Stir in the jaggery and cardamom powder while the mixture is still slightly warm, so the jaggery melts a bit and blends evenly.

  • Mix everything thoroughly. Add a spoonful of milk at a time only if the mixture feels too dry to bind.

Step 3: Shape the Ladoos

  • Grease your palms with a little ghee and shape the mixture into small, firm balls (ladoos).
