Main Ingredients

  • 1/2 cup Sugar (adjust to taste)
  • 1/4 teaspoon Cardamom powder
  • 2 tablespoons Rose water (optional)
  • A pinch of saffron strands (soaked in warm milk)
  • 2 tablespoons California Pistachios (chopped)
  • 1 tablespoon Almonds (sliced, optional)
  • A few dried rose petals (optional, for garnish)

Instruction

Step 1 - Prep the Rice

  • Soak and grind: Wash the basmati rice thoroughly. Soak it in water for 30 minutes. Drain and grind it into a coarse paste using a little water. You want it to be slightly grainy, not a fine paste.

Step 2 - Cook the Phirni Base

  • Boil the milk: In a heavy-bottomed pan, bring the milk to a boil. Reduce to a simmer and stir occasionally to avoid scorching.

  • Add rice paste: Once the milk has reduced slightly (after 10 minutes), slowly add the ground rice paste while stirring continuously to prevent lumps.

  • Thicken the mixture: Keep stirring and let the mixture cook on low heat for about 15–20 minutes, until it thickens to a pudding-like consistency.

Step 3: Flavour and Finish

  • Sweeten and flavour: Add sugar, saffron milk, and cardamom powder. Stir well and cook for another 5 minutes until the sugar dissolves completely.

  • Add chopped pistachios: Mix in chopped California Pista and rose water. Cook for 1–2 minutes more and turn off the heat.

Step 4: Chill and Serve

  • Set the phirni: Pour the mixture into individual serving bowls or earthen pots. Let it cool to room temperature, then refrigerate for at least 2 hours.
