Instruction

Step 1 - Prepare Almond Paste and Milk

  • Soak and blanch almonds: Soak 1/2 cup California Almonds in hot water for 30 minutes. Peel the skin and grind them into a smooth paste using a little milk.

  • Boil the milk:In a heavy-bottomed pan, bring the milk to a boil. Simmer it on low heat for 10–15 minutes until it reduces slightly.

Step 2 - Cook the Kheer

  • Add almond paste:Stir in the almond paste into the simmering milk. Keep stirring to avoid lumps. Let it cook for 5-7 minutes until the mixture thickens and becomes creamy.

  • Sweeten and flavor:Add sugar, cardamom powder, and saffron (if using). Cook for another 3-4 minutes until everything is well blended.
