Step 1 - Prepare the Kadai Masala
Toast the spices: In a dry pan, roast the coriander seeds, cumin seeds, fennel seeds (if using), dried red chilies, and black peppercorns on low heat until fragrant. This should take about 2-3 minutes.
Grind the spices: Once cooled, grind the roasted spices into a coarse powder. Set aside. This fresh spice blend is key to getting the authentic flavor of Kadai Paneer.
Step 2 - Prepare the Kadai Paneer
Sauté the paneer: Heat 1 tablespoon of oil in a kadai or large pan over medium heat. Lightly fry the paneer cubes until they turn golden brown. Remove and set aside.
Add ginger-garlic paste: Stir in the ginger-garlic paste and cook for a minute, allowing the raw smell to disappear. Add tomato puree: Add the pureed tomatoes to the pan and cook until the oil begins to separate from the masala (spice mixture).
Season with spices: Now, add turmeric powder, red chili powder, cumin powder, and the freshly ground Kadai masala. Stir well to coat the mixture evenly with the spices.
Add water or broth: Add a splash of water (about 1/4 cup) to make the gravy, and cook for 5-7 minutes until the spices are well blended and the gravy thickens slightly.
Cook the onions and bell peppers: In the same pan, add another tablespoon of oil. Add finely chopped onions and sauté until they turn translucent. Then, add the diced bell peppers and sauté for another 2-3 minutes until they are slightly tender but still crisp
Step 3: Combine Paneer and Gravy
Add fried paneer: Add the fried paneer cubes to the gravy and gently toss to coat them with the masala. Let it simmer for 2-3 minutes to allow the flavors to blend.
Add kasuri methi: Crush the kasuri methi (dried fenugreek leaves) between your palms and sprinkle it over the curry for an extra layer of flavor.
Finish with garam masala: Add garam masala and mix well. If you like a tangy flavor, add a tablespoon of tomato ketchup at this point for a slight sweetness and depth.
Step 4: Garnish and Serve
Garnish: Garnish your Kadai Paneer with fresh chopped cilantro and a few extra slits of green chilies if you like it extra spicy. Serving Suggestions: Kadai Paneer is best served with naan, roti, paratha, or steamed basmati rice. Pair it with a side of cooling yogurt or raita for the perfect meal.
